Recipe: Crispy Fried Onions

Crispy fried onions are a condiment used in many cuisines, especially Vietnamese, where they are called "hanh phi". They can be added to salads instead of bread croutons, in soups, dips, rice or mashed potatoes.

Ingredients

How to prepare crispy fried onions

  1. Peel the onions (I used 4 small red onions) and slice them into rounds as thin as you can. Spread the rounds on the work surface (put a towel or plastic wrap underneath) and leave them for 30 minutes to dry out.
  2. Heat plenty of oil in a deep pan (with a strainer basket preferably, it is much easier that way).
  3. When the oil is very hot, fry the onion rounds until golden, about 1 minute. Be careful, the rounds should not be crispy now, they will harden after you take them out of the oil, you only fry them until they are golden.
    * fry the rounds in batches, do not crowd them too much; I fried them in 3 batches
  4. Remove onto paper towels to absorb the excess fat and immediately sprinkle with salt. As it cools, the onion will harden and become crispy. Plus it will darken a bit in color, becoming brown.
  5. The rounds stay crispy only on the day of preparation. The next day they become chewy, but are still good to eat.
