Papanași - traditional Romanian fried cheese doughnuts that are a true national treasure. Served with sour cream and tangy jam, they've been a favorite in my family for many years.
This is the traditional Romanian fried papanași recipe. I got this fried papanași recipe from a TV show, and it was among my first culinary successes, giving me the courage to experiment further in the kitchen.
Ingredients
500g fresh cottage cheese (very well drained, should have small curds)
100g sugar
2 eggs
1/4 teaspoon baking soda
1 teaspoon vanilla extract
200g flour
sour cream
jam

How to prepare papanași - romanian fried cheese doughnuts
- Mix the cottage cheese with the sugar and baking soda. Then incorporate the eggs and vanilla, and finally the flour. You can briefly mix the dough with a food processor or mixer for better consistency!
*If the cheese is too moist, you may need an extra tablespoon of flour in the mixture; the dough should be easy to shape and not too sticky. - Pour plenty of oil into a deep frying pan and heat it.
- Form balls of dough about the size of your fist. Pierce the ball through the center with your finger, then dip it in flour. Gently enlarge the hole in the middle and slightly flatten the ring you've created.
- Set the heat to medium under the pan and fry the papanași on both sides until golden brown (approximately 5 minutes).
- Serve the fried papanași with sour cream and jam.
