Would you believe me if I told you I had not made potato stew in over two years? But I have not lost my touch 😋 - it turned out just as good as I remembered. It is a simple recipe, unpretentious, and as Radu also noticed, I restrained myself from adding any new flavors that might "ruin" its taste. As he exclaimed after tasting it: "this is real stew!". And the truth is I have kept the recipe unchanged since my student days, including the smoked sausage, because that is how I got used to it - the stew absolutely had to have smoked sausage.
The stew is better after it sits for a few hours, it gains consistency, but theory is one thing and practice another, because I can never resist putting a small bowl for myself right after finishing it, to dip fresh bread into the still-thin sauce and obviously burn my tongue. Only with this stew does that happen to me.
Ingredients
1.5kg starchy potatoes
2 smoked sausages (or bacon, other sausages)
1 large onion
1/2 red bell pepper
2 teaspoons sweet paprika
1/2 teaspoon pepper
1 teaspoon salt
3 tablespoons oil
a few sprigs of parsley
How to prepare potato stew
- Peel the potatoes and cut into medium cubes. Finely chop the onion. Cut the pepper into small cubes. Slice the smoked sausage into rounds.
- Saute the onion, pepper, and sausage in the hot oil for about 5 minutes.
- Add the salt, paprika, and pepper, stir quickly, and add the potatoes on top. Mix well and add water almost enough to cover the potatoes (about 2 and a half cups). Let everything simmer over medium heat until the potatoes are cooked (about 30 minutes).
- Turn off the heat, check for salt, and add the chopped parsley. Cover with a lid and let cool. The stew is better after it sits for a few hours - the sauce thickens and the flavor intensifies.
