Green Tomato Salad with Polenta

This recipe was sent to me by Raluca Dumitrescu and I had several reasons to try it: first, it is green tomato season and I had a bag in the fridge with no idea what to do with them; second, I had never heard of such a thing in my life and the result intrigued me; and finally, it seems to be Raluca's great-grandmother's recipe, so it is worth trying just because it has lasted so many generations.
Raluca, to be honest I started preparing the salad with enthusiasm, but towards the end doubts struck me... but they only lasted until I tasted it - it is a very good, light, and slightly tangy salad. As you advised, I served it with polenta and they go very well together, but I think it could also be served with toasted bread for those in more of a hurry. The verdict is clear: I will make it again this season while green tomatoes are still at the market.
Ingredients
500g green tomatoes
1 small onion
2 tablespoons oil
salt, pepper
Polenta
1/2 cup cornmeal
1 1/2 cups water
salt

How to prepare green tomato salad with polenta
- Prepare the polenta: add cold water to a pot and pour the cornmeal over it. Add salt and stir. When the polenta starts to thicken, begin stirring rapidly until it is done, meaning until it starts to pull away from the pot walls.
- Put the polenta in a small tray greased with a little oil. Let it cool.
- Meanwhile prepare the green tomato salad: heat the oil in a pan and add the very finely chopped green tomatoes (I chopped them in a food processor). Saute until they soften well, about 10 minutes, stirring continuously. When ready, turn off the heat and add the finely chopped onion. Season the salad with salt and pepper.
- Turn the polenta out of the tray and cut into slices. Brush with a little oil on top and grill the polenta pieces on a grill (or grill pan) on both sides until lightly browned.
- Serve the green tomato salad warm or cold with pieces of polenta.
