Homemade Nut Butter
I wrote peanut butter in the title because it's the most popular type you'll find in stores, but you can make it with any type of nuts: peanuts, cashews, hazelnuts, almonds, etc. Each variety has a slightly different flavor.
This butter can be used to make sandwiches for kids: with jam, bananas, chocolate... Or you can use it in desserts. I made a batch of cashew butter cookies yesterday - I'll post the recipe soon.
250g nuts (any kind, unroasted and shelled - I used cashews)
1 pinch salt
1 teaspoon oil
- Optionally, the nuts can be lightly toasted in a dry pan or in the oven.
- Put the nuts and salt in a food processor and blend well until they stick to the sides of the bowl and the blade can no longer mix them. Stop the processor and use a spoon to scrape the nuts off the sides and push them toward the center.
- Pour in the oil and start the processor again. At first, the nuts will seem to gather into a ball, but then they'll break apart and start forming a paste. Continue blending until you get a creamy consistency.
- Store in a jar in the refrigerator.
