How to Clean Squid
Some tips on how to choose fresh squid and then how to clean them.
- How to choose fresh squid:
- the skin should have burgundy (purple) spots, not brown;
- the white tube under the skin should be shiny, not a dull white;
- if you touch the tentacles, they should be flexible, not soft - you should feel they're still elastic - How to clean (see photos below):
- remove the spotted burgundy skin starting from the tail, it comes off very easily from there
- pull out the head (tentacles), it will come out with an intestine that must be removed
- clean the white tube inside: first remove a transparent plastic-like bone, then remove everything gelatinous inside; run the tube under a water jet and clean the inside well
- clean the head: between the tentacles is a cartilage with a black dot in the middle, remove it by squeezing from the base like you would squeeze out a pimple; cut off the eyes using scissors or a knife
- the squid are now clean, you can prepare them as you wish
