Recipe: Baked Eggs with Feta

How about breakfast in bed to pamper your loved ones? We have eggs, cheese, and tomatoes in this recipe - just add a slice of toast, a glass of fresh juice or a cup of coffee, and of course a little flower or something special to delight the eyes as well as the taste buds 😉

Ingredients

1 egg
1 slice feta, about 50g (goat or cow)
1 tomato (or 5 cherry tomatoes)
1 green onion stalk
a little dried oregano
salt, pepper, paprika
a little olive oil

Servings: 1

How to prepare baked eggs with feta

  1. Grease a small, oven-safe bowl with a little olive oil.
  2. Line the bottom of the bowl with tomato slices and sprinkle with a pinch of oregano.
  3. On top, place the feta sliced into pieces and sprinkle again with a little oregano and drizzle with a little oil. Sprinkle with finely chopped green onion.
  4. Crack the egg on top and season with a little salt, paprika (sweet or hot), and pepper.
  5. Bake the bowl at 220C (425F) for 20 minutes, until the egg white is set but the yolk is crispy on top but soft inside.
  6. Serve immediately with toast.
