It's very easy to prepare and it's sooo good... I'm bragging to myself until Radu comes home to taste it too. I was inspired by the potato pie which I combined with a recipe I found accidentally online.
I'll definitely make it again tomorrow... and I don't say that very often 😊
Ingredients
2 large potatoes
1 zucchini
100g grated parmesan
1 level tablespoon flour
2 stalks green onion
a few sprigs of dill
salt, pepper
chili
a little oil
Servings: 2
How to prepare potato and zucchini tart with green onion
- Mix the parmesan with flour, green onion cut into rounds and chopped dill. Season with salt and pepper.
- Peel the potatoes and zucchini and slice them very thin, like for chips.
- Grease a 26cm diameter pan with a little oil and place a layer of potato slices that will overlap slightly. On top place a layer of zucchini slices. Brush with very little oil (use a brush so you don't use too much oil) and sprinkle 1/3 of the parmesan mixture with green onion.
- Then follows: another layer of potatoes - layer of zucchini - brush with oil - sprinkle 1/3 of parmesan - layer of potatoes - brush with oil - sprinkle the rest of the parmesan mixture and a little chili (optional).
* in total we will have 3 layers of potatoes and between them 2 layers of zucchini. - Cover the pan with aluminum foil and press the tart with your hands so the layers stick together. Bake at 190°C for 40 minutes.
- Remove the foil and leave in the oven for another 15-20 minutes to brown on top.
- Slice it in the pan and gently remove the slices onto a plate. Serve warm.
