Apple Dumplings with Cinnamon and Nutmeg
This is Anna Olson's recipe - I saw it on TV a few weeks ago. It's a simple recipe with a stunning effect, especially for discerning guests.
Who doesn't love baked apple desserts?
Ingredients
Crust
220g flour
2 tablespoons sugar
a pinch of salt
225g butter cut into cubes, very cold - I put it in the freezer for 10 minutes
1 egg yolk
3 tablespoons water or milk
Filling
6 apples
6 tablespoons sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
a pinch of ground cloves
120g raisins
3 tablespoons breadcrumbs (I used ground walnuts - they absorb the apple juice)
2 tablespoons brandy
Syrup
300 ml water
110g sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 tablespoons butter
How to prepare apple dumplings with cinnamon and nutmeg
- Mix the flour with sugar, salt, and butter until you have a sandy dough. Then incorporate the egg yolk and milk/water until the dough comes together. The dough shouldn't be sticky at all. Wrap it in plastic and refrigerate for 15 minutes.
- Meanwhile, make the syrup. Put all ingredients except butter in a pot and boil for 5 minutes. Then stir in the butter and remove from heat.
- Now for the filling... Mix 2 tablespoons of sugar with the spices (cinnamon, nutmeg, cloves). Separately, mix the raisins with ground walnuts/breadcrumbs, the remaining sugar, and brandy.
- Peel the apples and remove the cores using a special corer.
- Roll out the dough and cut into 6 squares. Roll the apples in the spiced sugar, then place in the center of each dough square and fill with the raisin mixture. Gather the dough around each apple to form parcels, using wet fingers to seal the edges.
- Place the dumplings in a snug baking dish - they should be close together - and pour the syrup over them.
- Bake at 190°C for 45 minutes, until golden brown.
- Serve with vanilla sauce.
