Apple Cake
Dense sponge cake, super fluffy and soft, with unexpected flavors. The grated apples melt into the batter and perfume it along with the other added flavors.
I have not baked a sheet cake since last year. I preferred individual desserts, that way I can control the quantities I make and eat. I know myself too well... I ate this cake warm on the first day. Ingredients
300g all-purpose flour
5g baking powder
1 pinch of salt
150ml neutral olive oil (when I do not have it, I mix a little salad olive oil with sunflower oil; or you can use another type of neutral oil)
4 eggs
230g sugar
250g natural yogurt
50ml apple brandy (I used cider brandy)
1 small organic lemon
3 medium apples (about 600g; tart and firm variety, like Granny Smith)
1/4 teaspoon ground anise
1 packet bourbon vanilla sugar
How to prepare apple cake
- Grate the apples on a coarse grater or cut into small cubes. As you grate them, sprinkle with lemon juice to prevent oxidation. At the end, add the anise and mix.
- Sift the flour with the baking powder and salt.
- Beat the eggs and sugar with a mixer for 3 minutes until you have a pale yellow cream.
- Add the yogurt and mix. Add the brandy and grated lemon zest and mix.
- Add half of the flour and mix gently. Add half of the oil and mix gently. Continue the same way with the rest of the flour and then the oil. Do not mix too vigorously, just until the flour or oil is no longer visible in the mixture.
- At the end, add the grated apples (reserve a few tablespoons) and mix gently to distribute them in the batter.
- Pour the batter into a 30 x 20 cm pan and level with the back of a spoon. Sprinkle the remaining apples on top (if you feel they have released a lot of juice, squeeze them lightly in your fist before placing on the batter). Level the apples with the back of a spoon and then sprinkle with vanilla sugar.
* the cake can also be baked in a loaf pan - Bake at 180°C for 50 minutes. Test with a toothpick to make sure it is baked in the middle.
- After it has cooled, you can dust with a little powdered sugar.
