Recipe: Quick Apple Dessert

Last night I did not cook anything, we ordered pizza, and during the day we made do with goat cheese and tomatoes. So for dessert, to stay in tune with the rest of the day, I made something very quick from a few stray apples around the house. It reminded me of the grated apple cookies I used to eat when I was little.

Ingredients

4 apples
1/2 teaspoon cinnamon
1/4 teaspoon ginger
50g walnuts (or almonds, pistachios, etc.)
50g plain cookies
5-6 tablespoons brown sugar
1/2 small lemon
1 tablespoon butter
2 teaspoons yogurt (vanilla, with muesli, or with green walnuts... any flavor that pairs well with the dessert components)

How to prepare quick apple dessert

  1. Cut the apples into very small cubes. The easiest way to do this is to remove the cores with a special corer, peel the apple, cut it into not-too-thick slices, then dice them. Sprinkle the cubes with a little lemon juice to prevent oxidation.
  2. Finely grind (I used a coffee grinder) the walnuts and cookies. Put them in a pan (without oil) with 3 tablespoons of sugar and toast over high heat until the mixture lightly browns. Remove from heat and let cool completely.
  3. Put the peeled apples in a pan with melted butter, add 2-3 tablespoons of brown sugar and the spices. Saute until they soften a bit but not completely, about 5 minutes. Remove from heat and let cool.
  4. Keep both mixtures in the refrigerator until you want to serve the dessert; only then assemble them in glasses so the walnut-cookie mixture does not get soggy. In a glass, put a layer of walnut-cookie mixture, then a layer of apples... repeat the layers until the glass is full. On the top layer, put a teaspoon of yogurt and sprinkle with a little walnut-cookie mixture.
