Recipe: Baked Cheese Rolls

Rolled pastries filled with salty cheese and then baked with cream. A delicacy!

Ingredients

Dough

250g all-purpose flour (type BL55)
120ml water
1 very small egg
1 teaspoon oil
1/2 teaspoon salt

Filling

125g feta cheese or telemea (sheep and goat)
125g fresh cow cheese (quark or farmer cheese)
1 tablespoon sour cream (fermented)
1 small egg
ground black pepper

For baking

100ml sweet cooking cream
50g sour cream (fermented)
melted butter or oil for brushing

Pieces: 19, each 5-6 cm long

How to prepare baked cheese rolls

  1. Note: if you do not have small eggs, beat one large egg as for an omelet and use half for the dough and half for the filling.
    Put the flour in a bowl and make a well in the center. Add the salt, beaten egg, oil, and water there. Gradually pull the flour over the water, mixing with your fingers until the dough comes together.
  2. Knead the dough by hand until smooth. I kneaded it for about 2-3 minutes by hand and then in a bread machine on the 13-minute kneading program. If kneading exclusively by hand, knead for at least 10 minutes.
  3. Place the dough on a floured work surface and cover with a bowl. Let it rest between 1 and 5 hours (the longer, the better; I left mine for 1.5 hours).
  4. For the filling, mix all ingredients with a fork until smooth and there are no large lumps of cheese.
  5. Place a large cotton tablecloth on the table and dust with a little flour.
  6. Place the dough in the center and start rolling with a rolling pin as much as you can. Then continue stretching by hand: insert your fist under the dough sheet (starting from the center) and pull toward the edge. Go around the sheet like this until you get a large sheet (about 70 cm x 80 cm) that is very thin and transparent.
  7. Cut off the thick edges of the sheet with scissors or a knife.
  8. Drizzle a little melted butter or oil over the entire surface of the sheet. Spread the cheese filling over 2/3 of the sheet. You will get a thin layer of filling, that is fine.
  9. Roll up the sheet starting from the side with the filling, using the tablecloth to help.
  10. Cut the roll into pieces of the desired length (to fit your baking dish; I cut pieces of 5-6 cm).
  11. Place the pieces side by side in a heat-resistant dish greased with melted butter or oil. Brush the tops of the rolls with melted butter or oil.
    * I used two dishes because I did not have one large enough to hold all the pieces.
  12. Bake at 200C for 10 minutes. Remove the dish and pour the sweet cream mixed with sour cream over the top. Continue baking for another 20 minutes.
  13. They are delicious warm or cold.
