Bananas with Cream, Nuts and Honey
Quick Recipes Simple Recipes Lacto-Ovo Vegetarian Recipes Desserts
A dessert from Istanbul, from Mezze by Lemon Tree. A very successful combination of tangy, sweet, salty, spicy, creamy, and crunchy. Taste buds in ecstasy.
The only modification is that instead of kaymak, I used this mixture of tangy sour cream with whipped cream. And I had homemade cream, so thick you could cut it with a knife 😉
Ingredients
1 large banana (very ripe, with black spots on the peel)
60g mixed nuts (almonds, walnuts, and pistachios; roasted and salted)
Cream
75g sour cream (fermented)
150ml heavy cream (for whipping)
Honey
5 tablespoons honey
1/8 teaspoon chili powder
1 tablespoon lemon juice
2-3 tablespoons water
Servings: 3
How to prepare bananas with cream, nuts and honey
- Mix the honey with water and lemon juice (enough so it flows easily off the spoon) and chili.
- Whip the cream into stiff peaks that hold on the whisk. Fold in the sour cream in three batches, gently, so it doesn't deflate.
- Slice the banana. Coarsely chop the walnuts and almonds with a knife.
- Place a pastry ring of approximately 8 cm diameter on each of 3 plates.
- Distribute banana slices on the bottom of the molds.
- Add 1/3 of the sour cream mixture to each. Sprinkle the cream with 1/3 of the chopped nuts. They can be kept like this in the refrigerator until serving time.
- Pour 2 tablespoons of honey over the nuts. Remove the ring and pour the remaining honey around the "towers."
