A French-inspired fondue, a cheap and quick alternative to the famous Swiss fondue. It's the cheap version because you don't need that special fondue pot, but Camembert is quite expensive.
It must be eaten hot, immediately after preparation, with bread croutons as we served it, or with baked potato slices that you use for dipping in the sauce. And definitely accompanied by a glass of good quality dry white wine.
You can also use Brie cheese instead of Camembert or any soft cheese of this kind. Even if you can't find cheese in a wooden box, which is recommended because it's easier to handle and more attractive when serving, you can improvise by placing the cheese on parchment paper with slightly raised edges.
Ingredients
1 Camembert cheese (in wooden box!)
1 large garlic clove
1-2 tablespoons dry white wine
1 tablespoon olive oil
herbs de Provence (or thyme, or rosemary)
pepper
How to prepare camembert fondue
- Remove the cheese from its foil and place it back in the wooden box. I wrapped the bottom of the box in aluminum foil because there were some labels on the box that I couldn't remove and I didn't want them to burn.
- Cut a small lid on top, trying to remove only the white rind and as little cheese as possible.
- Sprinkle the crushed garlic in the cut area, a little pepper, and herbs de Provence. Then drizzle with olive oil and wine. Put the lid back on.
- Place the cheese box on a baking tray and bake at 180°C for 20 minutes.
- Meanwhile, prepare the bread croutons from 3-4 slices of bread with olive oil, salt, and pepper.
- When the cheese is ready, remove the top lid (carefully, don't burn yourself, because inside the cheese is very soft and hot) and serve immediately, dipping the croutons in the fondue.
