Don't you think that food made by someone else is most often much better? I'm convinced it is! You see, I don't like making schnitzels, but if someone else makes them I eat them non-stop, especially while they're still hot. I have a little voice in my head that won't let me make schnitzels, so Radu makes them every time - that means a maximum of twice a year, I can't drag him into the kitchen more often 😋.
Anyway, even though he makes them, the herb crust is my contribution 😉
Ingredients
1 kg boneless chicken breast (4 pieces)
4 eggs
3 tablespoons flour
150 g herb breadcrumbs (or plain breadcrumbs)
pepper, salt
plenty of oil for frying

How to prepare chicken schnitzel
- Cut the breast into slices, about 3-4 slices from each piece.
- Pound each slice on both sides until it becomes thin. Season the slices with pepper.
* if you're not using herb breadcrumbs which are already salted, add a little salt to the meat slices - Heat oil in a pan, about 2 fingers deep.
- Beat the eggs with a little salt in a bowl, then incorporate the flour. Put the breadcrumbs on a wide plate.
- Dip each meat slice in the egg mixture, then coat with breadcrumbs on both sides.
- Fry the schnitzels for about 3 minutes on one side, then another 3 on the other side. Remove onto paper towels to absorb the grease.
