Cinnamon Rolls with Baked Peaches
An interesting recipe with peaches that becomes an elegant dessert when prepared in individual baking forms.
Ingredients
Peaches
1 kg peaches
70g sugar
1/2 teaspoon cinnamon
juice from 1/2 lemon
Cinnamon Rolls
200g flour
50g cold butter + 1 tablespoon butter
180 ml sour cream
4 tablespoons sugar
2 teaspoons baking powder
a pinch of salt
1 teaspoon cinnamon
How to prepare cinnamon rolls with baked peaches
- Remove the pits from the peaches and slice them thin. Drizzle with lemon juice, then mix with sugar and cinnamon. Place them in a 20cm x 25cm baking pan and bake at 190°C for 20 minutes.
- Meanwhile, prepare the cinnamon rolls: in a food processor (mixer), add the flour, 2 tablespoons sugar, salt, and baking powder and mix for a few seconds. Add the butter (50g) cut into slices and mix again until you get a breadcrumb-like mixture. Add the sour cream and mix until the dough comes together.
- Roll out a rectangular sheet of dough on a surface lined with plastic wrap and dusted with flour.
- Melt the remaining tablespoon of butter. Brush the sheet with it.
- Mix the remaining 2 tablespoons of sugar with 1 teaspoon cinnamon. Sprinkle it evenly over the sheet.
- Roll the sheet along the long side (you can use the plastic wrap underneath to help) and then cut the roll into slices about two fingers thick using a very sharp knife that you pass through cold water from time to time.
- Remove the peaches from the oven and place the cinnamon rolls on top. Return to the oven for approximately 40 more minutes.
- Serve warm or cold.
