Recipe: Peaches with Yogurt and Walnuts

Good ideas come when you step out of your comfort zone. That's how it was yesterday - the excessive heat made me discover this wonderful yogurt cream. I needed a good dessert that didn't involve heat or too much movement in the kitchen. I opened the refrigerator and started putting my "wheels" in motion. This is what came out, which led me to conclude that it's only up to us to make the most of even the most uncomfortable situations, like the heat wave.

I used walnuts to make the recipe more accessible, but you can make it with pistachios+pistachio oil, with almonds+almond oil... you get the idea. Don't limit yourself to using it only for fruit - it also goes great alongside a slice of pound cake or sponge cake, next to a fruit tart slice, over crepes (maybe filled with banana and walnuts?).

Ingredients

1 ripe peach
2 tablespoons ground walnuts
300ml Greek yogurt
3 tablespoons honey (linden)
4 tablespoons walnut oil

Servings: 2

How to prepare peaches with yogurt and walnuts

  1. Grind the walnuts without chopping them too finely. Cut the peach in half, remove the pit, and dice it. Mix the peach with the walnuts. Divide into two glasses/jars/bowls.
  2. Mix the yogurt with the honey and then with the oil (one tablespoon at a time). Pour the yogurt cream over the peaches. Sprinkle with ground walnuts.
