Come have some pies! The day before yesterday I was fasting so I thought these pies would be welcome to take our minds off meat, especially since the markets are now full of dill and green onions. Such a treat, these are the pies of my childhood and now that my grandmother can no longer make them, I learned to prepare them myself. The shape isn't as perfect as hers, but I still have time to learn, right?
They're also good cold! To keep them, cover with plastic wrap or a bag right after preparing while still warm. They last 24 hours even without refrigeration, but I doubt they'll last that long 😊
Ingredients
Dough
500 g all-purpose flour
300 ml warm water
1 packet fresh yeast (25 g) (or 1 packet dry yeast)
2 teaspoons salt
1 teaspoon sugar
Filling
2 bunches green onions
1 bunch dill
3 tablespoons oil
salt
oil for frying

How to prepare green onion and dill pies
- Make a starter from yeast, some warm water, and sugar. Knead the dough from all ingredients until elastic and no longer sticks to your hands, then let it rise for at least 1 hour. I kneaded it in my bread machine, when I got home from work it had risen beautifully.
- Meanwhile, prepare the filling: chop the onions and dill, add a little salt, then the oil, and mix well.
- On a floured work surface, divide the dough in half, then each piece in half again, and then each of the 4 pieces in half again, thus obtaining 8 roughly equal balls of dough.
- Roll out each piece of dough as thin as you can. On half of it place 2 tablespoons of filling. Bring the other half of dough over the one with filling and press with your fingers at the edge to seal the filling. Roll out the obtained pie a bit more with the rolling pin, but be careful not to let the filling escape!
- In a non-stick pan, heat oil about a finger deep. When hot, fry the pies on both sides until golden. If they tend to puff up during cooking, prick them with a fork in a few places.
