Recipe: Mushroom Hand Pies

To make these hand pies, there's only one condition: you must like blue cheese, which has a strong, distinctive aroma. And porcini mushrooms are no less aromatic, so this is an amazing combination for your taste buds. I'll let you appreciate this combination, since I can only be subjective given that I adore all cheeses of this kind.

Ingredients

Dough

250 g all-purpose flour
1/2 packet dry yeast
125 ml warm milk
1 egg
1 tablespoon oil
1/2 teaspoon sugar
1 teaspoon salt
1 egg + 2 tablespoons milk (for brushing the pies)

Filling

1/2 kg mushrooms (porcini)
1 medium onion
1 clove garlic
2 pinches dried thyme
50 g blue cheese (like Roquefort, Gorgonzola)
2 tablespoons oil
salt, pepper

Yield: 8 pieces

How to prepare mushroom hand pies

  1. Put the dough ingredients in the bread machine and set it to the kneading and rising program. If you don't have a bread machine, dissolve the yeast and sugar in the milk. Add to the rest of the ingredients and knead by hand until the dough is elastic and doesn't stick to your hands, then let it rise covered for at least 1 hour.
  2. For the filling: cut the mushrooms into small slices. Sauté the finely chopped onion in 2 tablespoons of oil until soft. Then add the crushed garlic and continue sautéing for 1 minute. Add the mushrooms, season with salt, pepper, and thyme. Sauté until the liquid they release evaporates and they start to brown lightly. Remove from heat and let cool completely. Then add the crumbled cheese and mix well.
  3. Either roll out the dough into a thin sheet and cut circles with a glass, or divide it into 8 equal pieces, form balls from each piece, then place them on the work surface, put a plastic wrap on top and press with the bottom of a plate until you get thin discs.
  4. On half of each disc, place about 1 tablespoon of filling, cover with the empty half of the dough, and then seal the pie by pressing with the tines of a fork.
  5. Place all the pies on a baking sheet lined with parchment paper, brush with egg beaten with 2 tablespoons of milk, and poke the tops with the tines of a fork.
  6. Bake at 200°C for 40 minutes. Let them cool covered. They're good warm or cold.
