Potato Pies with Garlic Sauce

The dough and rolling technique are the same as for green onion and dill pies. Only the filling differs, I prepared these for my husband who doesn't really like dill, but loves these potato pies which he first discovered in my family's kitchen.
If you don't like garlic sauce, you can serve them spread with sour cream and then sprinkled with grated sheep cheese, but then they won't be vegan. They're also good cold, to keep them cover with plastic wrap or a bag while still warm. They last 24 hours without refrigeration.
Ingredients
Dough
500 g all-purpose flour
300 ml warm water
1 packet fresh yeast (25 g) (or 1 packet dry yeast)
2 teaspoons salt
1 teaspoon sugar
Filling
1 kg potatoes
6-7 tablespoons oil
pepper
salt
Garlic Sauce
5-6 cloves garlic
4 teaspoons oil
salt, pepper
1 teaspoon paprika
oil for frying

How to prepare potato pies with garlic sauce
- Make a starter from yeast, some warm water, and sugar. Knead the dough from all ingredients until elastic and no longer sticks to your hands, then let it rise for at least 1 hour. I kneaded it in my bread machine.
- Meanwhile, prepare the filling: boil the potatoes cut into cubes; drain the water and then mash them like for puree; slowly add the oil until the potatoes bind together; season with salt to taste and plenty of pepper, the mash should be spicy.
- On a floured work surface, divide the dough in half, then each piece in half again, and then each of the 4 pieces in half again, thus obtaining 8 roughly equal balls of dough.
- Roll out each piece of dough as thin as you can. On half of it place 2 tablespoons of filling. Bring the other half of dough over the one with filling and press with your fingers at the edge to seal the filling. Roll out the obtained pie a bit more with the rolling pin, but be careful not to let the filling escape!
- In a non-stick pan, heat oil about a finger deep. When hot, fry the pies on both sides until golden. If they tend to puff up during cooking, prick them with a fork in a few places.
- Prepare the garlic sauce: crush the garlic cloves and rub them with a little salt until softened; then slowly add the oil like for mayonnaise and rub to incorporate well, until it becomes a paste; add pepper and paprika then dilute with a few tablespoons of water.
- Serve the pies spread with garlic sauce. Enjoy!
