Herbed Goat Cheese Spread

This morning I heard some disturbing news - apparently the mici have run out. Do not panic, I have a recipe so good for the May 1st picnic that I am sure those who "got" mici will trade with us latecomers. I will trade half of my goat cheese spread for two mici 😉
Ingredients
100g goat cheese (creamy, fresh, not aged; I used LaColline)
100ml extra virgin olive oil (the kind for salads)
1 small sprig tarragon (about 1 tablespoon leaves)
5 larger basil leaves
1 small green onion
2 garlic cloves
black pepper, chili flakes
How to prepare herbed goat cheese spread
- Slice the garlic and place in a cup. Heat the oil and pour over the garlic. Let it infuse for 10 minutes. Drain the oil and discard the garlic.
- Put the herbs in a small food processor or mini blender and blend with the garlic-infused oil until the herbs are finely chopped. Pour the oil back into the cup.
- Put the goat cheese in the food processor with a pinch of chili flakes and start blending. Gradually, while the processor is running, add the herb oil until you get a cream (about half of the oil).
- Place the cheese spread on a plate and make a crater in the center with the back of a spoon. Pour the remaining herb oil into the crater. Sprinkle a few green onion rounds in the center. Grind black pepper around the edges. Serve with toasted bread or seeded bread.
