Recipe: Wasp Nest Cake

From the same sweet bread dough, I also made this wasp nest cake on Saturday. They are great for breakfast with a glass of milk. It is a bonus for Simona and Monika who wanted sweet bread with walnuts and raisins. In this form, girls, you can add whatever you want!

Ingredients

400g all-purpose flour
40g sugar
1/2 teaspoon salt
1 packet dry yeast (8g)
1 packet vanilla sugar (bourbon, I used Dr Oetker)
2 eggs (at room temperature)
60g melted butter
80ml milk (warm)
60ml water (warm)

Filling

100g sugar
150g butter
100g ground walnuts
cinnamon (optional)

Syrup

150ml water
100g sugar

How to prepare wasp nest cake

  1. Mix the flour with sugar and salt.
  2. Beat the eggs and mix with the milk, water, and melted butter.
  3. In the bread machine, put the egg mixture, then sprinkle the dry yeast and vanilla sugar on top. Place the flour mixture on top. Set the machine to the kneading and rising program.
    * the dough can also be kneaded by hand, then left to rise in a warm place for 1 hour.
  4. For the filling, cream the butter with sugar. Grind the walnuts.
  5. Put the risen dough on a floured surface and knead lightly. Then roll out to a sheet of 30 cm x 50 cm.
  6. Spread the creamed butter on the sheet. Sprinkle the walnuts on top. If you wish, you can sprinkle some ground cinnamon and/or a handful of raisins soaked in warm water/rum.
  7. Roll up the sheet along the long side. Cut into slices of about 3 cm.
  8. Arrange the slices in a round springform pan 26 cm in diameter. Place them at a distance from each other to have room to rise.
    * I only made 1/2 portion of dough, so I used a smaller pan, 20 cm in diameter
  9. Put the pan in a plastic bag and let rise for 30-40 minutes.
  10. Bake in the oven at 180C (350F) for 20 minutes.
  11. Prepare the syrup: boil the water with sugar on medium heat until the sugar dissolves.
  12. After 20 minutes, remove the pan from the oven and with a silicone brush brush the nests with the hot syrup. Return the pan to the oven for another 15 minutes. Remove again and brush with syrup once more. Bake for another 5 minutes.
