Almond and Sour Cherry Loaf Cake

A plain loaf cake does not particularly excite me, but with sour cherries it gains that something that is missing, that keeps it from being dry. And the almond flakes, which I had not used before, give an interesting texture to the crumb. I need to look for more desserts with almond flakes!
Ingredients
220 g flour
1/2 packet baking powder
50 g almond flakes
1 vanilla extract
150 g butter
150 g brown sugar
4 eggs
1 tablespoon cognac
1 pinch of salt
2 handfuls of pitted sour cherries (fresh, frozen, or from compote)
4 tablespoons almond flakes
How to prepare almond and sour cherry loaf cake
- I did all the steps in the food processor, but you can also use a hand mixer.
- Cream the butter with the sugar, but it does not need to dissolve, just be well blended.
- Incorporate the eggs one at a time and then the vanilla extract.
- Grind the almond flakes finely in a coffee grinder.
- Sift the flour mixed with the ground almonds, salt, and baking powder. Add this mixture to the butter and eggs. Also add the cognac. You will get a thick batter that holds on the spoon and is slightly sticky.
- Grease a classic loaf pan with butter and then sprinkle a little flour. Pour 1/2 of the batter, sprinkle whole almond flakes and sour cherries coated in flour over it. Cover with the rest of the batter and on top again sprinkle almond flakes and floured sour cherries. Whatever pan you use, remember: the batter should not fill much past the middle of the pan, to leave room for the cake to rise.
* I used a round bundt pan 13 cm in diameter and 8 cm high, and the remaining batter I put into 7 muffin molds, sprinkled with almond flakes and put a cherry in the middle - Bake at 180C for about 50 minutes. Insert a toothpick into the cake and if it comes out clean, it is done. If not clean, leave it in the oven longer.
