Last night we were unexpectedly invited for mulled wine at our friends' place. I was about to put a roast in the oven but gave up to quickly make these pancakes to bring to my friend Sasha, who is five months pregnant... I thought something sweet would make her happy...
They're quick to make and delicious just like this, without any other filling.
Ingredients
220g flour
350ml milk
2 eggs
50g sugar
1 teaspoon vanilla extract
1/2 teaspoon baking powder
2 large apples (I used Granny Smith)
1/4 pack butter for frying
powdered sugar and a little cinnamon for dusting
How to prepare apple pancakes
- Beat the eggs well with a whisk. Slowly add the milk while continuing to beat. Add the sugar, baking powder, and vanilla extract.
- Add the flour in 4-5 batches, mixing well after each addition so there are no lumps. You'll get a soft, foamy batter.
- Grate the apples using a coarse grater, then fold them into the batter.
- Heat 1 teaspoon of butter in a non-stick skillet. Place a spoonful of batter in the butter, then use the back of the spoon to spread the pancake as thin as possible so it cooks through, and at the same time as round as possible so it looks like a pancake 😋 . Form as many pancakes as fit in your skillet... I could fit 3-4 per batch.
- Fry the pancakes on both sides. Keep the heat on low.
- Repeat until you finish the batter. Add butter to the skillet before each batch of pancakes.
- Dust the pancakes with powdered sugar mixed with a little cinnamon using a small tea strainer.
- Serve warm.
