Aromatic Salt
Last year I tried to make a small garden with herbs that I like and that are not characteristic of our area, so I find them rarely in our stores and at much too high prices. Obviously I failed miserably, no trace of basil, sage or rosemary in my beds. You can imagine how "annoyed" I was when I saw that in Croatia sage grows directly from rocks, and they use rosemary to make hedges!!!! Anyway, I'm not giving up, I'll try to grow them in pots. I already got a small basil in a pot that I brought for a few days by car from Croatia and the poor thing survived and even started to grow new leaves 😊 I hope it grows nicely although I have about two basil bushes on my conscience. 😋
I also brought with me a precious catch, a big bag of rosemary that I froze, it freezes very well. And with a few sprigs I made aromatic salt, following Jamie Oliver's idea. You can make aromatic salt with other herbs of course, you just have to dose them depending on how aromatic they are. Rosemary having a strong aroma, it's enough to use 2 sprigs.
You can use this salt in sauces, soups, on homemade chips... and it keeps very well in jars, in the refrigerator for several months.
Ingredients
90g coarse salt
2 sprigs rosemary
1 lemon
How to prepare aromatic salt
- In a blender put the lemon juice with the rosemary leaves. Blend to get a cream.
- Add the salt and blend a little more until it's uniformly colored in a pale green.
- Store the salt in airtight jars in the refrigerator. It lasts for several months.
