Recipe: Baked Sweet Potatoes

Simple, oven-baked is my favorite way to cook sweet potatoes. In line with the minimalist approach I intend to follow this year as well. But let's see how it goes, let's see what the new year brings... I'm curious...

Ingredients

2 sweet potatoes
1 teaspoon dried oregano (or thyme)
salt, black pepper
2-3 tablespoons oil

Servings: 4

How to prepare baked sweet potatoes

  1. Peel the potatoes and cut them into sticks (like french fries). Sprinkle with salt, grind black pepper, and sprinkle oregano. Pour the oil and mix well so they are evenly coated.
  2. Arrange them in a baking tray lined with parchment paper.
    * generally I make sure to only put enough potatoes to form a single layer in the tray; if they're too crowded they won't brown, they come out as if steamed; I like them soft that way too though
  3. Bake at 220°C (or 200°C with fan) for 25-30 minutes, until completely cooked through and lightly browned in places.
