Recipe: Pan-Fried Sweet Potatoes

Spiced pan-fried sweet potatoes. They go very well alongside a crispy duck breast or a duck leg confit.

Ingredients

2 sweet potatoes (approx. 500 g)
1 small onion (approx. 35 g)
2 garlic cloves
1/2 teaspoon grated ginger paste
1/2 teaspoon cumin
1/4 teaspoon turmeric
1/2 teaspoon nigella seeds (black seeds)
2-3 tablespoons oil
salt, black pepper

How to prepare pan-fried sweet potatoes

  1. Peel the potatoes and cut into cubes (approx. 1.5 cm).
  2. In a wide pan (approx. 28 cm) heat the oil and add the finely chopped onion. Sauté for 5 minutes until well softened, then add the crushed garlic and ginger paste. Sauté for another 30 seconds. Add the cumin and turmeric and stir to dissolve in the oil.
  3. Add the potatoes, sprinkle with salt and black pepper, mix well. Add 50 ml of water and put the lid on.
  4. When the contents of the pan start to sizzle, turn the heat to low and let the potatoes cook. It will take about 15-20 minutes. Stir the pan every 5 minutes, being careful not to crush the potatoes. Towards the end if they're not yet done and the contents look dry, you can add 2-3 more tablespoons of water.
  5. Lift the lid when the potatoes are done and add the nigella seeds. Let cook without the lid for another 2 minutes. Adjust salt to taste.
