Pan-Fried Sweet Potatoes
Spiced pan-fried sweet potatoes. They go very well alongside a crispy duck breast or a duck leg confit.
Ingredients
2 sweet potatoes (approx. 500 g)
1 small onion (approx. 35 g)
2 garlic cloves
1/2 teaspoon grated ginger paste
1/2 teaspoon cumin
1/4 teaspoon turmeric
1/2 teaspoon nigella seeds (black seeds)
2-3 tablespoons oil
salt, black pepper
How to prepare pan-fried sweet potatoes
- Peel the potatoes and cut into cubes (approx. 1.5 cm).
- In a wide pan (approx. 28 cm) heat the oil and add the finely chopped onion. Sauté for 5 minutes until well softened, then add the crushed garlic and ginger paste. Sauté for another 30 seconds. Add the cumin and turmeric and stir to dissolve in the oil.
- Add the potatoes, sprinkle with salt and black pepper, mix well. Add 50 ml of water and put the lid on.
- When the contents of the pan start to sizzle, turn the heat to low and let the potatoes cook. It will take about 15-20 minutes. Stir the pan every 5 minutes, being careful not to crush the potatoes. Towards the end if they're not yet done and the contents look dry, you can add 2-3 more tablespoons of water.
- Lift the lid when the potatoes are done and add the nigella seeds. Let cook without the lid for another 2 minutes. Adjust salt to taste.
