How to prepare baked sweet potatoes with za'atar
- Choose potatoes of about the same size so they bake at the same time. About 7 potatoes fit in a baking tray at once.
- Cut the sweet potatoes in half lengthwise. Place them in the oven tray lined with parchment paper, cut side down.
- Put them in the oven preheated to 220°C and leave until a fork goes in easily. It takes about 30-40 minutes for medium potatoes.
- When they're done you can take them out, or if you want them a bit more browned on top, flip them cut side up and turn on the oven broiler for a few minutes until they form a golden crust.
- Transfer the potatoes to a wide plate, season with salt, grind a little black pepper, then sprinkle with za'atar. Drizzle olive oil over them.
- They can be served immediately, but they're also very good at room temperature. You can eat them with a spoon directly from the skin, or you can scoop out the flesh in one piece using a spoon. They're good as a side dish, with cheese or added to salads.
