Recipe: Baked Sweet Potatoes with Za'atar

The simple method for baking sweet potatoes. The simplest one.

za'atar

How to prepare baked sweet potatoes with za'atar

  1. Choose potatoes of about the same size so they bake at the same time. About 7 potatoes fit in a baking tray at once.
  2. Cut the sweet potatoes in half lengthwise. Place them in the oven tray lined with parchment paper, cut side down.
  3. Put them in the oven preheated to 220°C and leave until a fork goes in easily. It takes about 30-40 minutes for medium potatoes.
  4. When they're done you can take them out, or if you want them a bit more browned on top, flip them cut side up and turn on the oven broiler for a few minutes until they form a golden crust.
  5. Transfer the potatoes to a wide plate, season with salt, grind a little black pepper, then sprinkle with za'atar. Drizzle olive oil over them.
  6. They can be served immediately, but they're also very good at room temperature. You can eat them with a spoon directly from the skin, or you can scoop out the flesh in one piece using a spoon. They're good as a side dish, with cheese or added to salads.
