Recipe: Sweet Potatoes with Goat Cheese and Marinated Onion

... and other goodies that couldn't fit in the title 😊 lime, almonds, parsley.

Another recipe quite adapted from Ottolenghi (Plenty More), but I kept the general idea. At a party, a friend was talking about how well sweet potatoes or squash (yessss, you can make this recipe with butternut squash too) go with onion. And I remembered this recipe from Ottolenghi, which stuck in my mind because of the lime. So sweet potatoes, onion AND LIME. And don't forget the almonds - you can really tell if you don't add them.

Ingredients

4 sweet potatoes (or butternut squash)
50g soft goat cheese
25g lightly toasted and salted almonds (or hazelnuts)
1 tablespoon oil
salt, black pepper, a little ground allspice

Marinated Onion

1 small red onion
3 tablespoons lemon juice (or/and lime)
3 tablespoons olive oil
1/4 bunch parsley
1 small lime
salt

How to prepare sweet potatoes with goat cheese and marinated onion

  1. Peel the potatoes and cut into cubes. Season with salt, freshly ground black pepper and a good pinch of ground allspice. Add 1 tablespoon of oil and mix.
  2. Roast at 220°C until cooked and lightly browned (about 20 minutes). Remove and let cool.
  3. Meanwhile, cut the onion in half and then into thin slices. Season the onion with salt, mix and let sit for 10 minutes.
  4. Squeeze the onion of its released juice and add the lemon juice. Let it marinate for 15 minutes.
  5. Finely chop the parsley, grate the lime zest over it and chop some more with the knife to mix everything together.
  6. Add the parsley with lime over the onion along with the olive oil. Mix. It's better if it has time to sit a bit.
  7. Arrange the potatoes on a platter. Crumble the goat cheese on top. Scatter the marinated onion. Sprinkle with chopped almonds. Sprinkle a little sea salt over everything and pour the liquid from the marinated onion.
