Quick Recipes Grilling Recipes Sauces and Salsa
A quick sauce with smoky coffee flavor. Ideal for grilling (chicken, pork ribs, hamburgers). Can be used for marinating or as a serving sauce. Pairs well with oven-baked sweet potatoes.
Ingredients
1 can of tomatoes (400g)
1/2 onion
1 tablespoon tomato paste
1/2 teaspoon smoked paprika
2 tablespoons Tabasco Chipotle sauce
30g sugar
40ml vinegar (apple cider or red wine)
1/2 teaspoon instant coffee
1 pinch ground cinnamon
1 tablespoon oil
salt, pepper

How to prepare bbq ketchup
- Sauté the chopped onion in oil just until softened. Add the tomato paste and sauté for another minute until it dissolves in the fat.
- Add the tomatoes (blended into a purée), paprika, Tabasco, vinegar, salt and pepper to taste. Simmer over low heat for about 10 minutes to reduce slightly.
- Pass the sauce through a sieve to make it smooth.
- Put it back in the pot and add the sugar, instant coffee and cinnamon. Simmer for another 5 minutes to thicken slightly. Taste for salt.
- Store in the refrigerator in a covered container or jar.
