Recipe: Beef Stroganoff

It's a quick dish but at the same time impressive, both in taste and appearance. You can serve it with rice/pilaf, boiled potatoes, or pasta that will absorb the delicious sauce.
It takes so little time to prepare that it's perfect when guests arrive unexpectedly. You'll impress them pleasantly, I assure you.

The only thing you need to pay attention to is choosing the right meat for this recipe - it must be veal tenderloin which cooks quickly.

Ingredients

500 g veal tenderloin
300 g mushrooms
2 small onions
200 g sour cream
1 heaping teaspoon mustard
1 small cup tomato juice (or 1 heaping teaspoon tomato paste dissolved in a little water)
4 small gherkins
salt, pepper

How to prepare beef stroganoff

  1. Cut the meat into thin strips. Chop the onion. Cut the mushrooms into large slices.
  2. In a little oil, fry the veal over high heat for 1-2 minutes, until it changes color.
    * If you use another cut of veal that takes longer to cook, taste the meat and if it seems tough, add a cup of water at a time and braise it until it becomes tender. At this step, the meat must be fully cooked!
  3. When the meat is done, transfer it to a plate. Add the mushrooms and onion to the pan, reduce heat to medium, and let the vegetables soften. Stir occasionally, about 8 minutes. Return the meat to the pan.
  4. Add the sour cream, stir, and simmer for 1 minute. Then add the mustard and tomato juice. Let it simmer for about 5 minutes until you get a creamy sauce.
  5. Turn off the heat and add the gherkins cut into thin strips.
