Recipe: Cereal Yogurt Squares

Shhh...don't tell anyone, I wasn't supposed to cook today for medical reasons, but I couldn't resist. I made something quick with seasonal fruits, but if my husband finds out I'm done for - I promised to rest until after Easter.

You can use any fruit yogurt you like and then decorate the squares with cubes of that fruit. I used strawberries - their season has just started and they're still at an enormous price, but at least they're sweet.

It's a quick treat, very light and slightly tangy from the yogurt. If you want it sweeter, add some sugar to the yogurt cream as well.

Ingredients

260g muesli (oat, wheat, rye flakes and raisins)
110g flour
50g brown sugar
1/2 teaspoon cinnamon
110g butter
2 eggs
1 large strawberry yogurt (470g)
2 tablespoons flour
strawberries for decorating

How to prepare cereal yogurt squares

  1. In a bowl, mix the muesli with flour, sugar and cinnamon. Then add the butter cut into flakes and mix with your hands until the dough is sandy. Place the mixture in a 20cm x 20cm pan lined with aluminum foil or baking paper and level it. For a perfectly even layer, use the bottom of a glass to smooth it out.
  2. Beat the eggs and then mix with the yogurt. Incorporate the 2 tablespoons of flour. Pour the yogurt cream over the cereal base.
  3. Bake in a preheated oven at 180°C for 35 minutes. Remove, run a knife around the edges to loosen it from the pan, then let it cool.
  4. When cold, cut into squares and decorate with strawberry cubes.
