Oat Bars with Jam

These are perfect for breakfast with a glass of milk, with coffee, or to pack in children's school lunchboxes. This is the kind of treat that gets better the longer it sits.
I must confess that this is the recipe that led me to "sin" and abandon my diet.
Ingredients
120g butter
200g sugar
1 egg
1 vanilla extract
180g all-purpose flour
1 pinch salt
1/2 teaspoon baking powder
150g rolled oats
30g barley flakes
1 jar (350g) jam (your preference - I used mixed berries)
How to prepare oat bars with jam
- Cream the butter with sugar until the sugar dissolves. Add the egg and vanilla extract and mix well.
- Add the flour mixed with salt and baking powder.
* I did the above steps in a food processor, but you can do it by hand - Fold in the oat flakes.
- Grease a 26cm diameter pan (or 22cm x 22cm if square), lined with parchment paper, with a little butter.
- Spread 2/3 of the oat dough on the bottom, first with your hands, then when it's distributed, place plastic wrap or a bag on the dough and press with the bottom of a glass until the dough is level.
- Spread the jam on top.
- Mix the remaining dough with the barley flakes, then crumble it over the entire surface.
- Bake at 180C for 40 minutes, until golden on top.
- Let it cool, then cut into rectangles. They're good served immediately, but even better the next day.
