Today we have a special guest, Dr. Ramona Grosu from Casa Bio, who presents a quick, tasty and nutritionally balanced recipe. It was designed as a special dessert for diabetics, for those allergic to gluten, and for young children (having no added sugar; the sweetness comes from dates).
Ingredients
650ml plant-based milk (recipe below)
200g chia seeds
plum butter
Walnut Plant Milk
200g hydrated walnuts
8 dates
800ml hot water
zest of 1 lemon
1 teaspoon bourbon vanilla (dehydrated; or vanilla extract)
Yield: 1 liter milk
How to prepare chia balls
- To prepare the plant milk: blend everything in a blender. If desired, you can strain through a fine sieve.
- Mix the chia seeds with the plant milk and let soak for at least 15 minutes. The seeds will swell and result in an easily moldable paste.
- Form balls from the resulting dough, placing 1 teaspoon of plum butter in the center of each.
