Crepes with Chestnut Puree, Sour Cherries and Chocolate Sauce

This is how I start the new year! With a plate of crepes in front of me and a short list of resolutions for this year, some of which I've already broken, even though only 3 days have passed 😉 Well, what can you do, we can't become perfect overnight.
Ingredients
1 batch of crepe batter
Filling
250g chestnut puree
6 tablespoons cooking cream
2 tablespoons mascarpone
sour cherries (fresh, frozen, from compote or in syrup)
Chocolate Sauce
80g dark chocolate (75% cocoa)
80ml cooking cream
2 tablespoons powdered sugar
Makes: 5 pieces
How to prepare crepes with chestnut puree, sour cherries and chocolate sauce
- Prepare the crepes following your usual crepe recipe. You'll get 5 crepes of 26cm diameter.
- For the filling, mix the chestnut puree with cream and mascarpone until smooth.
- For the chocolate sauce: melt the chocolate over a double boiler. Add the slightly warmed cream in which you've dissolved the powdered sugar. Mix well and let it cool. It can be prepared a day ahead. I keep it in a bottle in the refrigerator and when I need it, I just hold the bottle in hot water for 10 minutes.
* If using milk chocolate, the powdered sugar in the sauce is not necessary. - Spread the crepes with a generous layer of filling. Place sour cherries at one end and roll up. Place on a plate and decorate with chocolate sauce.
