Cucumber Limeade
Ingredients
250 ml lime juice (from 6-7 limes)
6 small fresh cucumbers
1 cup sugar
4 cups cold water
250 ml sparkling mineral water (1 cup)
mint
ice cubes
How to prepare cucumber limeade
- Bring the sugar and 1 cup of water to a boil. Boil for 2 minutes after the sugar has completely dissolved. Let the syrup cool.
- Pour the lime juice into a pitcher.
- Peel the cucumbers, cut them in half, and scoop out the seeds with a spoon. Put the cucumbers in a blender with 1 cup of water. Blend well.
- Strain the cucumber juice through a fine sieve directly into the pitcher. Press the cucumber pulp with a spoon to extract as much juice as possible.
- Add half of the syrup and the remaining cold water (2 cups). Mix everything well. Taste, and if you want it sweeter, gradually add the rest of the syrup.
* I stopped at 1/2 of the syrup, because we like it more tart - Refrigerate the pitcher.
- When serving, add sparkling water to the pitcher, ice cubes, and garnish with mint leaves.
* If you don't think you'll drink the whole pitcher at once, add ice cubes only to the glasses, not the pitcher, so the limeade doesn't get diluted
