Recipe: Cucumber Limeade

Try this limeade for a triple refreshment: lime, cucumber, and mint.

Ingredients

250 ml lime juice (from 6-7 limes)
6 small fresh cucumbers
1 cup sugar
4 cups cold water
250 ml sparkling mineral water (1 cup)
mint
ice cubes

How to prepare cucumber limeade

  1. Bring the sugar and 1 cup of water to a boil. Boil for 2 minutes after the sugar has completely dissolved. Let the syrup cool.
  2. Pour the lime juice into a pitcher.
  3. Peel the cucumbers, cut them in half, and scoop out the seeds with a spoon. Put the cucumbers in a blender with 1 cup of water. Blend well.
  4. Strain the cucumber juice through a fine sieve directly into the pitcher. Press the cucumber pulp with a spoon to extract as much juice as possible.
  5. Add half of the syrup and the remaining cold water (2 cups). Mix everything well. Taste, and if you want it sweeter, gradually add the rest of the syrup.
    * I stopped at 1/2 of the syrup, because we like it more tart
  6. Refrigerate the pitcher.
  7. When serving, add sparkling water to the pitcher, ice cubes, and garnish with mint leaves.
    * If you don't think you'll drink the whole pitcher at once, add ice cubes only to the glasses, not the pitcher, so the limeade doesn't get diluted
