The traveler's bar.
Such bars are very filling, and although they're good anytime, I especially like to prepare them when we travel because they keep us full for a long time and save me from the excesses of the first gas station I come across.
Ingredients
100g walnuts (lightly toasted)
75g almonds
100g dried figs
50g dried apricots
50g dried prunes
50g dried dates
1/2 teaspoon ground cinnamon
1/2 teaspoon Chinese five spice
1/8 teaspoon ground cardamom
zest from 1 orange
4 tablespoons pear brandy, cognac, or rum (for children use orange juice)
Yield: 2 rolls of 20 cm x 5 cm
How to prepare dried fruit and nut salami
- Put 50g walnuts and 50g almonds in a food processor. Blend until finely ground.
- Add the remaining ingredients and blend for another 1 minute on high speed. You'll get a paste with visible bits of chopped nuts.
- Divide the paste in two and place in plastic bags, shaping them into rolls. If you want a nicer appearance, you can roll them in shredded coconut. Store in the refrigerator.
