Homemade Condensed Milk
Some time ago I tried both condensed milk recipes sent by Ancutza and Marnie and both turned out very well, with a consistency identical to store-bought (the photos are made using version 1, from Ancutza) and a similar taste.
Version 1 (submitted by Ancutza)
375 ml whole milk (3.5% fat)
500g powdered sugar (store-bought, contains starch which helps solidify the milk)
45g butter
vanilla extract (optional)
Version 2 (submitted by Marnie)
2 cups powdered milk
1 cup sugar (2 cups sugar if you want it very sweet)
6 teaspoons butter
- Version 1: Put all ingredients to boil over low heat. When the sugar and butter have melted, raise the heat a bit and wait for it to boil. From the first boil, let it simmer for exactly 10 minutes, no more no less - this determines the consistency of the condensed milk. It is very important to respect this boiling time. During these 10 minutes, stir continuously with a wooden spoon. Remove the milk from heat and stir to cool. Put the cooled milk in a jar and store in the refrigerator.
- Version 2: Mix all ingredients in a blender, then add 1 cup hot water and mix well until it becomes like a thick sauce. Leave in the refrigerator for several hours or even until the next day, resulting in not-too-sweet condensed milk.
