Homemade Macaroni
Dough Lacto-Ovo Vegetarian Recipes Pasta Croatian
Macaroni prepared in a unique way, as I learned to make them at Konoba "Ranč Maha" on the island of Korčula. Making them is fun and is a great activity for spending quality time with family.
Ingredients
1kg white flour
1 egg
1 egg yolk
100ml oil
400ml water
1 teaspoon salt
Servings: 12 (1.2kg pasta)
How to prepare homemade macaroni
- Put the flour in a bowl and make a well in the center. In the well, add the beaten eggs, oil and water. Sprinkle the salt on the edge.
- Start kneading, slowly incorporating the flour into the liquid in the center. Knead until the dough comes together.
- Put the dough in a bread machine set to the kneading program (mine takes 13 minutes). At the end you'll get a dough that's not sticky at all and very elastic. The dough is neither too firm nor too soft. Cover the dough with a towel and let it rest for 30 minutes.
* the dough can also be kneaded by hand - Cut the dough into smaller pieces. Roll each piece into a log about 1.5cm thick. Then cut the logs into pieces about 1cm long.
- Take each piece of dough in your hand and flatten it into a rectangle shape. Wrap the rectangle around a wooden skewer.
- Roll the skewer between your palms until the dough thins out. Don't press too hard when rolling. Remove the skewer from the macaroni. Place the formed macaroni on a clean towel to dry a bit.
- Cook the macaroni in plenty of salted water.
