How to prepare how to choose red radishes
- Look at the leaves: they should be green, not wilted at all; this is the first sign they are fresh; if the leaves are young and fresh, they can also be used in salads, cream soups or green vegetable dishes (just like spinach or beet greens).
- Look to make sure they are not cracked: cracked ones have a high chance of being hollow inside.
- Squeeze one between your fingers: it should be firm; if they are soft, it is a sign they are not fresh, they are dehydrated; if they give in a lot under your fingers, it means they are hollow in the center; those that are slightly dehydrated can be placed in a bowl of cold water for 1 hour to rehydrate.
- A matter of taste: choose small radishes if you want them more tender and not spicy; choose medium radishes if you want them more crunchy but spicier; do not buy the very large ones, they are usually "spongy."
Storage: remove the leaves, put the radishes in a zip bag. Cover them with paper towels, squeeze the bag to remove as much air as possible and close the zipper. They keep in the refrigerator for about 1 week. If they soften a bit, you can rehydrate them in cold water as specified in point 3.
