Mexican Eggs Breakfast

Recipe: Huevos Rancheros

From the leftovers of our "Mexican night," I quickly put together breakfast. Nothing gets thrown away, everything gets eaten... or at least that's how it should be. To be honest, I struggle with this because I'm a bit disorganized when it comes to reusing leftovers. But sometimes I succeed.

Ingredients

1 tortilla (or flatbread)
3 tablespoons Mexican refried beans
2 tablespoons salsa ranchera
1 egg
1/2 avocado
your favorite cheese
salt, pepper, paprika
a little oil for frying

Servings: 1

How to prepare huevos rancheros

  1. Warm the tortilla (or flatbread) briefly in the microwave or on a hot skillet.
  2. Place it on a plate. Spread a layer of beans on top, then a layer of salsa.
  3. Fry the egg in oil, seasoned with salt, pepper, and paprika. Place it over the salsa, in the center.
  4. Cut the avocado into cubes and scatter them around the egg. Grate cheese on top.
  5. Serve for breakfast.
