Huevos Rancheros
From the leftovers of our "Mexican night," I quickly put together breakfast. Nothing gets thrown away, everything gets eaten... or at least that's how it should be. To be honest, I struggle with this because I'm a bit disorganized when it comes to reusing leftovers. But sometimes I succeed.
Ingredients
1 tortilla (or flatbread)
3 tablespoons Mexican refried beans
2 tablespoons salsa ranchera
1 egg
1/2 avocado
your favorite cheese
salt, pepper, paprika
a little oil for frying

How to prepare huevos rancheros
- Warm the tortilla (or flatbread) briefly in the microwave or on a hot skillet.
- Place it on a plate. Spread a layer of beans on top, then a layer of salsa.
- Fry the egg in oil, seasoned with salt, pepper, and paprika. Place it over the salsa, in the center.
- Cut the avocado into cubes and scatter them around the egg. Grate cheese on top.
- Serve for breakfast.
