Recipe: Mango Lemonade

Exotic lemonade with mango, lime and mint. The combination of mango (or passion fruit) and lime is dreamy. I had a sorbet like this last year and the combination has stayed vividly imprinted on my taste buds.

Canned mango in syrup can be found at supermarkets. I've seen it at Cora, Auchan and Carrefour. I've only tried the Cora version and really liked it. Be careful though, they also sell mango compote which I don't recommend - it tastes like pears boiled to disintegration. The can in the photo, however, is good, aromatic, and the syrup is light.

Ingredients

1 can of mango in syrup (425g)
100 ml lime juice (from 2-3 limes)
zest from 2 limes
650 ml sparkling water (or still, if preferred; you can also add a shot of rum for an alcoholic version)
mint

How to prepare mango lemonade

  1. Blend the canned mango (with all the syrup) and lime zest in a blender or food processor until you have a puree. Transfer to a pitcher.
  2. Gradually add lime juice, tasting as you go until you have an aromatic and tangy mixture to your liking. Canned fruits can have different sugar contents, so I can't give you an exact amount of lime juice. If you use the can I photographed, then 100 ml of lime juice is enough, as this syrup is light. However, if you use mango in a more concentrated syrup, you'll need more lime juice.
  3. Add the water. Mix well.
  4. Serve in chilled glasses over ice cubes with mint leaves.
