Strawberry Lemonade
Delicious fizzy lemonade. A year ago, I advised you to "recycle" the strawberry sauce from this dessert. This year I followed my own advice and transformed the sauce into lemonade.
Ingredients
300g strawberries (weighed after removing the stems)
12 large basil leaves
zest from 1 lemon
150 ml lemon juice (from 2 large lemons)
650 ml sparkling mineral water (cold, from the refrigerator)
Simple Syrup
150g sugar
150 ml water

How to prepare strawberry lemonade
- In a small saucepan, combine the sugar and still water over low heat. Keep on low heat until the sugar dissolves. Then you can increase the heat slightly so the syrup boils and let it simmer for 5 minutes. Allow the syrup to cool. You'll get about 200 ml of syrup.
- Put the cleaned strawberries in a blender along with the basil and lemon zest. Blend well in a food processor or blender until you get a smooth sauce. Strain the sauce through a fine sieve to remove the seeds.
- Pour the strawberry sauce into a 1.5 liter pitcher. Add the lemon juice. Add the sparkling water, but be careful as it creates a lot of foam.
- Gradually pour in the syrup, stirring and tasting as you go. When you like how sweet it is, stop (I only used 120 ml of syrup) - you don't have to use all the syrup.
- If desired, garnish with basil leaves. Serve immediately in chilled glasses or over ice cubes.
