Recipe: Marzipan Chocolate Roll

This dessert is a gift for you from my mother on the occasion of the Easter holidays. Besides being quick to make and exceptionally tasty and attractive, you can prepare it well in advance because it keeps in the freezer.

Don't be misled by the photo, I took it up close to capture the creamy texture of the roll, that's why it looks big. In reality, the roll is thin, with a diameter of approximately 5 cm (2 inches).

Ingredients

Base

2 egg whites
250g powdered sugar
3 level tablespoons cocoa
200g walnuts, toasted and then ground

Cream

2 egg yolks
7 tablespoons sugar
1 tablespoon flour
1 level tablespoon cocoa
3 tablespoons milk
200g butter at room temperature

How to prepare marzipan chocolate roll

  1. Mix all the cream ingredients (except the butter) in a bowl that you place over a pot of hot water. Beat with a whisk over steam until it gets a fluffy cream consistency.
  2. Let the cream cool down.
  3. Mix the butter well and press on it a few times with a wooden spoon to release water.
    * If you remove the water from the butter, you reduce the risk of the cream curdling
  4. Mix the cream with the butter.
  5. For the base, beat the egg whites until stiff peaks form and then mix with the rest of the ingredients until well combined.
  6. Divide the base and cream into two equal parts.
  7. On a plastic wrap sprinkled with 2-3 drops of water, place a part of the base. Place another plastic wrap on top and use a rolling pin to roll out a thin rectangular sheet. Remove the top plastic wrap.
  8. Spread half of the cream over the base, also in a thin layer.
  9. Roll everything up using the bottom plastic wrap. Tie tightly at the ends with string. Put in the freezer to harden.
  10. Repeat with the rest. Both rolls are stored in the freezer. Take out 5 minutes before serving and slice. Can be stored in the freezer for about 1 month.
