It seems yesterday I had a problem with the site and the recipe texts were deleted 😢 It was supposed to be the quick recipe of the week and being Friday, a fasting recipe...
For this recipe to be successful, you just need to use very good quality olive oil, as well as good pasta - I used penne from Barilla.
Ingredients
300g pasta
4 cloves garlic
1/2 teaspoon freshly ground chili
8 tablespoons extra virgin olive oil
7 fresh basil leaves (do not use dried)
salt

How to prepare pasta with olive oil, garlic and chili
- Put the pasta to boil in plenty of water with salt and 2 tablespoons of olive oil. The cooking time is as indicated on the box. When the pasta is cooked "al dente", drain the water, reserving half a cup of the cooking water. Do NOT rinse the pasta under running water!
- In a wide pan, heat the remaining oil and add the garlic cut into slices. Sauté for a few minutes until golden, but don't let it turn brown as it will give a bitter taste to the sauce. Remove it from the pan and add the chili instead, sautéing for 1 more minute.
- Add the pasta and mix well with the seasoned oil and add salt. Then pour 7 tablespoons of the pasta cooking water over them. Leave on heat for another 2 minutes.
- At the end, add the roughly torn basil, stir and remove from heat.
- Serve immediately, plain or as a side dish to other foods - I usually serve it alongside chicken fricassee (I don't think it's an Italian tradition, but the combination works and that's what matters).
