Plum Jam with Raisins and Walnuts
It can be used for crepes, tarts or fill puff pastry with this plum jam. The best plum jam, I have impressed many friends with it.
Use firmer, less ripe plums, even if they are a little sour, because they won't fall apart during cooking.
And you can play a little with the amount of sugar, with the 500g I put, my plum jam came out medium sweet and was a little tangy from the citrus, but I personally would have preferred it a bit less sweet (that didn't stop us from finishing half a jar already), next time I'll put 400g of sugar.
Ingredients
1kg firm plums
500g sugar
1 cinnamon stick
1 small orange
1/2 lemon
150g raisins
150g walnuts
How to prepare plum jam with raisins and walnuts
- Cut the orange and lemon into very thin slices and remove the seeds, if any.
Split the plums in half and remove the pits. - In a thick-bottomed or non-stick pot, add 50ml water, the plums, citrus fruits, cinnamon stick and pour the sugar on top. Mix gently. Put on low heat and monitor until the sugar melts, stirring occasionally. The plums will release juice and slowly, slowly the plums will be covered. When it starts to boil, the jam will form a pink foam. From the moment you see the pink foam, leave the compote on low heat (just bubbling a little) for 25 minutes. Stir rarely and gently so as not to crush the fruit.
- Wash 2 jars of 800g, dry them and put them in the oven heated to 200°C for about 20 minutes, to sterilize.
- After the 25 minutes, add the raisins and walnuts to the compote, stir and leave on the heat for 1 more minute.
- Put the jam in the sterilized jars, wipe the mouth of the jar if it got dirty, put the lids on and tighten them well. Turn the jars upside down and leave like this for 10 minutes to create a vacuum.
- Put the still hot jars under a blanket and let them cool like this overnight. Store in a cool place, in the cellar or pantry.
