These potato wedges with Dijon mustard are much crunchier because of the mustard seeds. And much more flavorful, also because of the mustard but also the herbes de Provence and garlic.
You can serve them in newspaper or colored paper cones. If using newspaper, line the inside with aluminum foil for hygiene reasons.
Ingredients
6 medium potatoes with thin skin
2 tablespoons Dijon mustard (must be whole grain mustard)
2-3 tablespoons oil
2 cloves garlic
1 teaspoon herbes de Provence
salt, pepper, paprika to taste

How to prepare roasted potatoes with dijon mustard
- Mix the mustard well with the rest of the seasonings, including the oil.
- Don't peel the potatoes, just wash them well with a stiff brush and then cut them into 6-8 slices depending on the potato size, to get wedges. After cutting, don't wash them again!
- Put the mustard mixture over the potatoes and mix by hand until each potato slice is well coated.
- Arrange the potatoes in a single layer on a baking tray lined with parchment paper. Sprinkle more salt over them and some hot paprika if desired.
- Bake in the oven at 240°C for 45 minutes.
- Serve immediately while they're crispy. They're good cold too, but they soften a bit.
