When Radu saw them last night, he asked if this week we are only having ball-shaped food. 😋 And I do not know how he did it, but he guessed right, because tonight I am also planning something in ball form.
I prepared the croquettes from branza burduf (sheep cheese aged in sheep stomach) bought directly from a mountain dairy in the Moeciu area. Real cheese, the texture is like butter, I have not eaten anything like this in a long time. I remember when I was in elementary school my mother made a spread from branza burduf with a little lard, just enough to make it easy to spread and she spread it between two slices of bread. Oh how good it was!
Ingredients
200g branza burduf (Romanian aged sheep cheese, or use feta mixed with cream cheese)
1 egg
3 level tablespoons flour
1/2 teaspoon baking powder

How to prepare romanian sheep cheese croquettes
- Mix all the ingredients and knead until you get a homogeneous dough.
- Form balls from the dough, the size of a walnut.
- Heat plenty of oil in a deep pan and fry the balls until golden on all sides and they float in the oil.
- Remove onto paper towels to absorb the excess fat. Serve immediately. They are tasty cold too, but they do not compare to the hot ones.
