Spaghetti with Onion and Anchovy Sauce

Slightly sweet caramelized onion, salty anchovy, spicy chili, and fresh herbs... all of these over spaghetti loved by everyone.
Ingredients
250g spaghetti
2 large onions (about 400g)
3 garlic cloves
5 anchovies (preserved in salt or oil)
15 grinds of chili flakes
1/4 bunch parsley
4 basil leaves
5 tablespoons olive oil
salt, pepper

How to prepare spaghetti with onion and anchovy sauce
- Cut the onion into thin slices. Heat the oil in a pan and add the onion. Sauté over medium heat, stirring often, until the onion softens. Then reduce the heat to minimum and let the onion caramelize, about 30 minutes, stirring occasionally.
- Cook the spaghetti in plenty of salted water according to the package instructions.
- If the anchovies are in oil, drain them well; if in salt, soak them in cold water for at least 30 minutes (changing the water a few times). Finely chop the anchovies, almost into a paste.
- When the onion has a golden-brown color, add the sliced garlic and sauté for 1 more minute. Then add the chili and anchovies and stir until the anchovies dissolve in the oil, about 2 minutes. Turn off the heat.
- Drain the pasta, but reserve half a cup of the cooking water. Add the pasta over the onion sauce, add the finely chopped parsley and basil, about 3 pinches of pepper, and salt to taste. Pour in the pasta water and mix well.
- Serve immediately sprinkled with parmesan.
