Spaghetti with Cherry Tomatoes

Ingredients
200g spaghetti
400g cherry tomatoes
3 tablespoons oil
1 level tablespoon butter
1 tablespoon tomato paste
1 teaspoon balsamic vinegar glaze
1 heaping teaspoon brown sugar
basil leaves
hard cheese (parmesan-type; optional)
salt, pepper

How to prepare spaghetti with cherry tomatoes
- Cook the pasta in plenty of salted water according to package instructions.
- Cut the tomatoes in half with a serrated knife.
- Mix the tomato paste with 2 tablespoons oil, 3 tablespoons water, and the brown sugar. Pour over the tomatoes and mix.
- Heat 1 tablespoon of oil and the butter in a wide pan. Add the tomatoes, making sure to place them all cut-side down. Lower the heat and cook for 5 minutes. Season the tomatoes with salt and black pepper.
- Add the balsamic vinegar glaze dissolved in 2 tablespoons of water. Stir gently (you'll see the sauce thickens) and cook for another 2 minutes. Taste the sauce for salt and sugar.
- Drain the pasta and add it to the pan with the sauce. Add a few torn basil leaves. Stir well for 1 minute so that all the sauce coats the pasta.
- Serve immediately, sprinkled with cheese if desired.
